                                        LEMON RICE (Helen Garvock)

                                        1 c. rice
                                        2 c. chicken broth
                                        2 T. butter
                                        2 T. lemon juice
                                        1 t. lemon zest or more to taste
                                        salt and pepper to taste
                                        1/2 c. Parmesan cheese
                                        8 T. finely chopped green onions or chives
                                        8 T. minced fresh parsley

                                        Combine rice, broth and butter. Add lemon juice, zest, salt and pepper. Bring to boil. Reduce heat and simmer, covered, approximately 25 minutes. Add cheese, onions and parsley. Toss and serve.
