                                        CHANNEL 56 MEATLOAF (From "Our Viewers Cook")

                                        MEATLOAF VEGETABLE MIXTURE:
                                        1 c. onions, finely chopped
                                        1 c. celery, finely chopped
                                        1 c. carrots, finely chopped
                                        1/2 c. fresh parsley, finely chopped
                                        2 cloves garlic, finely chopped

                                        Steam all ingredients til blanched (about 2-3 minutes). Drain well and set aside.

                                        MEATLOAF MEAT MIXTURE:
                                        1/2 can cream of mushroom soup
                                        3/4 c. bread crumbs
                                        1 T. oregano
                                        salt and pepper to taste
                                        2 large eggs, beaten
                                        1 lb. ground lean pork
                                        1 lb. ground lean beef

                                        Mix meatloaf mixture together with steamed vegetables. Add fresh, chopped mushrooms to taste if desired. Pack meatloaf mixture into a (9x13x2 inch) pan (this is a thin meatloaf).

                                        MEATLOAF SAUCE:
                                        2 1/2 cans (10 1/2 oz. ea.) cream of mushroom soup (use the remaining 1/2 can from above)
                                        1 1/2 soup cans of water

                                        Mix together and pour over meatloaf. Top with sautéed mushrooms.

                                        Bake 350° for 1 hour 15 minutes (at 40 minutes drain any excess fat from the pan). Serve the meatloaf with mashed potatoes.
